Quinoa Tacos

I swear that my mom had to have eaten a lot of tacos and enchiladas when she was pregnant with me because I am seriously obsessed with Mexican food.

I am pretty sure I eat Mexican food at least once a week. I know I should probably try new cuisines more often, and don’t get me wrong I definitely do, but when I think about what food I want to make for the week, it typically involves some sort of Mexican flare!

 

This week I decide to get a lil funky and omit the meat, and add all the quinoa!! Spencer doubted these tacos because, “what’s a taco without meat,” he asked. Well that statement right there means I had to make something that would leave him speechless.

With our background in body building, I have definitely had one to many chicken and broccoli meals in my day (and Spencer could literally eat that for breakfast, lunch, dinner and dessert. No joke! Good thing he is married to me).

 

So I love making dishes here and there without meat because I honestly feel like it gives my digestive system a nice little break and it helps save a little money too! Plus, with the quinoa, corn and beans these tacos still have an amazing meaty texture!

Once these tacos were finished I knew Spencer was still skeptical. After eating a few, I asked him how they were he replied “Bomb!”

 

So I think the score now for who is right goes:

Zoe: 12,57

Spencer: 0

 

But in all seriousness, these tacos are so simple to make, have all sorts of good nutrients in them plus they are damn good! That’s a win in my book any day.

 

If you’re ready for a fiesta in your mouth, you’ll need these ingredients.

Ingredients

  • 1 cup of quinoa
  • 1 cup of chicken or vegetable broth
  • 1 (14 oz.) can of fire roasted tomatoes
  • 1 (10 oz.) can of red enchilada sauce
  • 1 (4 oz.) can of diced green chilies
  • 2 cans of black beans (drained and rinsed)
  • 1 can of corn (drained)
  • 1 packet of taco seasoning
  • Corn tortillas
  • Optional toppings: Feta cheese, limes, cilantro, sour cream, salsa, avocado etc.

 

Instructions

1.) Combine all ingredients in a large crock pot (except corn tortillas and toppings). Cook on high for 3-4 hours depending on your slow cooker.

2) Once quinoa is cooked, add to tortillas and top with your favorites!
